Our cheesemaker makes the ricotta by using a skimmer to obtain the proteins of the milk whey, which separates from the curd during Bella Molisana cheesemaking; he puts it into the strainer, allowing the dripping out and the forming of the classic cone shape. Ricotta is a great food, really loved by children. It can be eaten as a second course or put in ravioli and tortellini or savoury cakes and tasty soufflés.
